Paleo recipes I have tried

Obviously when making a huge dietary shift, a change in recipes is bound to happen. I dont really enjoy cooking all that much. My husband does like to cook, but only when the kitchen is clean...which can be an issue mid-week. I think I dont like to cook because I work most evenings. Starting next week I will be out until at least 8:30 pm every night and some nights even later. It sucks to come home and start cooking at 9pm and then eat dinner at 10pm and go to bed at 11pm. 

However, with this new way of eating I have HAD to cook more and try out new recipes. I want to share them here because maybe someone will stumble on this blog and think the food looks good. Or maybe not...



 
This has cheese in it. I know, I know...not really all that Paleo. I am Paleo Vegetarian so you need to work with me here. I am allowing a little bit of cheese and beans in my diet or else I will shoot myself due to lack of food options. 

It was really yummy, but I little more runny than I had hoped. Maybe I needed more cauliflower? It is really amazing how rich and creamy coconut milk is. I am excited to use coconut milk again!

These tasted good but I didnt cut the veggies up enough so nothing stuck together. Next time I will cut everything smaller and maybe add an extra egg. Worth making again!

Introduction

I have recently changed my eating habits. If I was to label it, I would call myself a Paleo Vegetarian. For those familiar with "Paleo" it might sound like a contradiction, but for me it is a way to change how I eat. 

It all started with this realization...

I am a sugar addict. 

I could seriously survive on gummy bears and Twix bars all day. If ate cake and ice cream for every meal I would be happy. I wake up in the morning and I want sugar. I want sugar for breakfast and lunch. I want sugar during dinner, after dinner, and late at night. I have gone out late at night in my grubby pjs just to get some candy or an ice cream.

I know that the whole "sugar addiction" idea is questionable by some. I questioned it myself for a long time. My sugar cravings just became so frequent and so strong that I had to take notice.

My goals with being a "Paleo Vegetarian" are as follows:

1. To break my addiction to processed sugar so I am able to actually taste how sweet it can actually be. I want to stop craving sugar and actually enjoy it as a special treat once and a while.

2. To cut out as much processed food as possible. Especially during the week. Especially foods like bread, cereals, flour, and soy vegetarian products.

3. To have more energy, feel healthier, and maybe even loose a little weight. 

4. To become aware of what I am eating. To be present in my food choices. To put as much care and time into my food as I do into my work, my friends and family, and my yoga practice.

This blog is for me to track my progress. It is for me to vent my frustrations and share my victories. I will talk about food and share recipes. It will probably be uninteresting to most people, but I am primarily doing it for myself. I am hoping to get advice and hear stories from others who are on the same path.

Hopefully this blog will be funny too.
